To learn more about her research, reach out to Dr. Maya at cmaya@chapman.edu.<\/p>\n<p>ABSTRACT: <em>My research focuses on the potential of edible insects as a sustainable alternative to traditional animal proteins. To promote their acceptance in Western diets, I explore strategies to overcome psychosocial barriers, such as incorporating insects into familiar, palatable food products and engaging audiences through educational initiatives.
