href=\"http:\/\/www.chapman.edu\/scst\/news-and-events\/science-forum-series.aspx\">Science Forum Series<\/a> next Wednesday with Dr. Rosalee Hellberg, Assistant Professor, Microbial Food Ecology.<\/h3>\n<p>This talk will provide an overview of the potential effects of climate change and variability on food safety and food-borne illness.\u00a0 Numerous environmental factors, including temperature, acidity, oxygen availability and rainfall can impact the transport, growth and persistence of pathogenic microorganisms in foods.\u00a0 The direct impacts of climate change and variability on the levels of pathogens in our foods will be discussed, as well as specific examples of outbreaks and food-borne illness linked to climatic factors and extreme weather
