Abstract:
My research focuses on the potential of edible insects as a sustainable alternative to traditional animal proteins. To promote their acceptance in Western diets, I explore strategies to overcome psychosocial barriers, such as incorporating insects into familiar, palatable food products and engaging audiences through educational initiatives. My work also examines whether these proteins can maintain equivalent nutritional value while addressing consumer concerns, aiming to transform edible insects into staples of sustainable nutrition. My current work further examines emotional responses to edible insects, investigating how feelings such as disgust, fear, and surprise shape willingness to try and adopt these foods.
