December 12, 2024
At our 2024 GCI Postdoc Showcase, Postdoctoral Fellow Cassandra Maya presented a poster about the perceptions and nutritional values of insects being a new protein source. To learn more about her research, reach out to Dr. Maya at cmaya@chapman.edu.
ABSTRACT: My research focuses on the potential of edible insects as a sustainable alternative to traditional animal proteins. To promote their acceptance in Western diets, I explore strategies to overcome psychosocial barriers, such as incorporating insects into familiar, palatable food products and engaging audiences through educational initiatives. My work also examines the ability of these proteins to maintain equivalent nutritional value while addressing consumer concerns, aiming to transform edible insects into staples of sustainable nutrition.
