The Orange County Register published an opinion piece by Professor Ernesto Hernández-López entitled, “Don’t Discourage Food Trucks.” The op-ed praises food trucks and asserts that food trucks do not compete unfairly with fixed restaurants because they meet a different demand. Furthermore, “food trucks represent Southern California’s culinary apex, accessible to millions whether it’s gourmet burgers, vegetarian, artistic sweets, and kimchi quesadillas, or loncheros with tacos and tortas,” Professor Hernández-López said.
